When I saw this recipe I was instantly drawn to it because not only did it look delicious and healthy, but I had almost every ingredient (and that hardly ever happens). I'm a pretty simple person when it comes to cooking; I want meals that are yummy, on the healthy side if possible and do not have tons of ingredients.
I made this one right away, but instead of making it into a set of different cupcakes I baked it as a bread and it was exquisite. I also substituted whole milk for coconut milk because I wanted to trim a few calories and coconut milk is rich and creamy--a better sub than almond milk. I also used 1/2 a cup of syrup instead of only 1/3 (and made up for some of the calories there🤷♂️)
Banana Oat Cupcakes 🍌🧁 . . . (Makes 12 Cupcakes) 📝INGREDIENTS📝 2 Bananas 2 Eggs 1/2 Cup Maple Syrup 1/4 Tsp Salt 2 Tsp Baking Powder 2 Tsp Vanilla Extract 1 Tbsp Cinnamon 1 Cup Greek Yogurt 1 Cup of Milk—I used Coconut milk 3 Cups Oats 👩🍳PREPARATION👨🍳 1. Preheat the oven to 350F/180C 2. In a large mixing bowl, mash the bananas to form a paste, and then whisk in two eggs using a fork. 3. Add all the remaining ingredients (besides the oats), and mix again using a fork until everything is completely combined. 4. Add the oats, and stir until you have a uniform mixture. 5. Finally, add the milk, and mix to combine. 6. Place cup-cake cases on a muffin tray, and fill each one evenly or just bake the. Whole thing (bake time for this is 45 mins) 7.
